Chef Yannick Alléno shows you an original way to cook cauliflower: whole, coated in spices and slowly roasted in the oven. A tender and flavorful cauliflower that will make a delicious side-dish to your meat or fish meals!
 
In terms of benefits, cauliflower is an excellent source of vitamins, fibers and proteins, it also has anti-inflammatory properties and helps purify all the toxins in the body.
INGREDIENTS (SERVING 4)
To make the Roasted Cauliflower, you will need the following ingredients:
- 1 Cauliflower
 
For the marinade:
- 2 tbsp of melted semi-salted butter
 - 4 chopped garlic cloves
 - 2 g grated fresh ginger
 - 1 tbsp sugar
 - ½ tsp turmeric
 - ½ tsp paprika
 - Freshly ground pepper
 - Chopped coriander
 
For the coriander sauce:
- 50 g chopped coriander
 - 15 g fresh ginger
 - 40 g white onion
 - 40 g honey
 - 140 g mayonnaise
 - 80 g lime juice
 - 70 g olive oil
 - Salt and pepper
 - 1 g xanthan gum (optional)
 
Cauliflower preparation
Prepare the marinade in a bowl by mixing all the ingredients together. Rub the cauliflower with the marinade. Cook the cauliflower in foil for 75 minutes at 160 °. Check the cooking.
Sauce preparation
Grate the ginger, cut the onions into brunoise and add all the coriander sauce’s ingredients except the mayonnaise. Mix all the ingredients in a blender. Mix until smooth, then add the mayonnaise and whisk. Keep cool.
 
In a deep plate, place the coriander sauce, then place the cauliflower (still warm). Sprinkle with sesame seeds and coriander.
